Jalapeno Popper Grilled Cheese Sandwich


1 tsp extra virgin olive oil

1 jalapeno pepper

1 tsp nutritional yeast

4 tbsp non dairy cream cheese

1/4 cup non dairy cheddar cheese

1/2 tsp apple cider vinegar

1/2 tsp onion powder

1/2 tsp garlic powder

Salt and pepper to taste

2 slice of your favorite bread

Butter for toasting bread


Pre heat oven to 400F

Starting off with the jalapeno pepper. Cut off stem, and cut into quarters. You can remove the seeds for less spice.

In a small bowl, toss in jalapeno, olive oil, and a pinch of salt and pepper. Mix around to coat well and place onto a parchment paper lined baking tray, skin side up. Bake for 10-15 minutes or until the jalapeno has softened.

In the meantime, toss in remanding ingredients EXCEPT for the bread and butter, into a small bowl and mix well until combined.

To toast the bread spread a small amount of butter onto both sides of bread slices. Lay slices of bread into a pan on low heat and cook until the desired color is reached on both sides.

Chop roasted jalapeno into small pieces and mix into the cheese mixture.

Add cheese mixture onto one bread slice and place into the broiler on high for 3 minutes. Remove from broiler and top with the other toasted bread slice. Cut in half if you wish and ENJOY!
