Double Chocolate Pecan Cake

Ingredients

Dry Ingredients

1 1/2 cup all purpose flour

1/3 cup unsweetened cocoa powder

1 cup granulated sugar

1/2 tsp salt

1 tsp baking soda

Wet Ingredients

1/3 cup vegetable oil

1 cup cold water

1 tbsp apple cider vinegar

1 tsp vanilla extract

Add-ins

1 cup chopped pecans, or your favorite nut

1/3 cup non dairy semi sweet mini chocolate chips

Extra pecans for garnish

Frosting

4 tbsp non dairy butter, softened

2 cup powdered sugar

1/2 cup cocoa powder

1/4 cup non dairy milk (approx)

Instructions

Pre heat oven to 350F.

In a mixing bowl, mix all of the dry ingredients together.

In a separate mixing bowl, mix together the dry ingredients.

Combine wet and dry ingredients and mix until everything is well combined.

Fold in the chopped pecans and mini chocolate chips.

Add cake mixture into a round greased cake pan.

Place in the oven for 30 minutes or until a toothpick comes out clean.

For the frosting

In a mixing bowl, add soften non dairy butter, powdered sugar, and cocoa powder, and mix until everything is well blended. Add milk, 1 tbsp at a time until you reach a spreadable frosting consistency.

Frost Cake and garnish with a sprinkle of pecans over top and all that is left now is ENJOY!
